Tumis Sawi Tahu

Masakan untuk orang malas seperti saya. Actually bukan malas la sangat, tapi tengah jaga baby... Mak tak boleh sesuka hati berleha di dapur.  So, kita kena buat menu yang simple dan praktis untuk berbuka dan sahur.

Kan...?? 😁


Tumis Sawi Hijau dengan Tauhu memang pas untuk sajian makan sahur. Tambahkan sedikit cili merah/sambal, goreng ikan masin dan nasi panas. Perrgggghh memang tak ingat dunia.


Bahan:
2 ikat sawi hijau / sawi pahit
1 potong tahu keras, potong dadu, goreng sebentar
1 sdm minyak goreng
Gula, garam, merica bubuk

Bumbu iris:
2 siung bawang merah
3 siung bawang putih
2 cabai rawit



Panaskan wajan/kuali, masukkan minyak goreng. Tumis bumbu iris hingga harum.
Masukkan tahu, garam, gula dan sedikit air. Tutup hingga bumbu meresap, masukkan batang sawi. Masak hingga sawi empuk.

Masukkan daun sawi, aduk dan rasakan. Jika sudah cukup rasa angkat.

Hidangkan dengan nasi panas, sambal dan ikan asin goreng.

Mongolian Beef

Another made up menu I found in internet :P


Mongolian beef or chicken is quite common food in Chinese take-away menu.
The recipe quite easy, not so many ingredient and fast cooking.

We tried to copy the recipe for our weeknight dinner.
Well.... since we don't have enough meet in the fridge, I throw in blanched cauliflower, carrot and yellow onion to make it look more on the plate. 






Ingredients:
200 gram beef, slices nicely. Dust with corn flour, set aside.
1 cup cauliflower cut and blanched for 30 second
1 carrot, peel and sliced
1/2 yellow, cut in big slices

2 cloves garlic, 1 cm ginger => slices all
3 dried chili
1 tbs cooking oil

1 tbs oyster sauces
1 tbs dark soy sauces
1 tbs light soy sauces
1 tsp sugar
*mix all with 1/2 cup water
*If you are indonesian, you can change the dark-light soy sauce with just kecap manis. And remove sugar from the recipe.

1 tsp corn flour, mix with bit of water (I use about 1/4 cup)

Heat up wok, add in cooking oil. 
Stir in garlic,ginger and dried chili, cook for 30 second.
Add in beef. Cook until beef start browning.

Add in the sauce mix, and vegetable. Cook for about 1 minutes until carrot start soft.
Add in corn flour mix and onion, stir until the sauce thicken.
Taste to your preference, Mongolian beef should be a bit sweet, spicy and tasty :)


Served with hot steamed rice.

Mee Suah Kung Fu


Another made up menu :)

People living in Malaysia and Singapore are very familiar with this dish. Kung-Fu, yes but not Kung Fu Panda or any martial art you can imagine.

Kung Fu in cooking refer to any noodle (usually Koay Teow) lightly fried with egg like an omelette and served with various vegetable and protein (chicken, fish ball, beef, seafood) and runny-gooey-egg-starcy gravy.

Other place might refer this dish to cantonese noodle / Hong Kong noodle.


Tips: 
1. Cut and slices ingredients in advance, wrap in paper towel/tissue and store in any container.
2. Use any vegetable and protein available in your fridge




Ingredients:
1/2 pack of dry noodle, I use Mee Suah we bought from Melaka a while ago
1 eggs (optional)
salt, pepper, cooking oil
=> blanch noodle for couple second, drain, mix with bit of cooking oil, bit of salt and  pepper.


Gravy:
2 tbs cooking oil
1 1/2 cup water / chicken broth
4 cloves garlic, smashed
1 tsp corn flour mix with bit of water
2 tbs oyster sauce
1/2 tsp light soy sauce
bit of sesame oil
1 egg
salt
pepper

Bahan Isi / Filing:
- Bit of cauliflower
- 1/2 carrot, peel and slices
- bit of choy sim / kai lan / bok choy / spinach (any greens)
- 5 pcs prawn shelled
- fish fillet, cut cubes
- chicken breast, cut cubes





Heat up cooking oil, add in garlic till fragrant (not cook yet)
add in any protein you have (chicken, fish, fish ball,  seafood) cook for about 30 second
Add in water, salt, pepper, oyster sauce, soy sauce, sesame oil and corn flour. 
Leave it simmer and stir lightly.

Add in vegetable, simmer till cook.

portion noodle in a bowl, and pour in gravy.

Served immediately

Daging Masak Tauco Pedas


30 Min Cooking, exactly :)

It was our last night dinner, like usual kalau sudah penat bekerja tapi nak juga makan home-cooking. We need to create menu with minimum effort.

Super easy-peasy dish to enjoy with hot steamed rice, sambal,  and prawn crackers (kerupuk)





Ingredients:

200 gram beef/chicken, slices nicely
1 green bell pepper
5 mushroom (optional)
2 tbs spicy fermented bean (Tauco)
2 garlic
1/2 yellow onion
1/4 cup water
2 tbs cooking oil

Heat up wok, add in 2 tbs cooking oil.
stir fried onion and garlic until fragrant.
Add in Tauco, water and meat.  Cook with low heat until meat is tender
Stir in bell pepper, mushroom and any other vegetable you like.
Season with salt, sugar and pepper.

Enjoy with steamed rice, samba and prawn crackers :)

Nasi Jagung


Last couple weeks memang sangat teringin-ingin makan nasi jagung,
sampai termimpi-mimpi...

Ya lah...  memang selalu begini.
Rindu makanan kampung, rindu makanan masa kecil dulu..

Nasi Jagung di Kuala Lumpur dapat dimana ya...? hehhehe

NASIB BAIK KAMI BALIK KAMPUNG THE NEXT COUPLE DAYS




Merengek, minta ibu pergi ke pasar subuh untuk beli nasi jagung buat sarapan
(kalau aku yang pergi pasar subuh, duit beratus ribu akan habis... semua rasa nak beli)


Nasi jagung memiliki cerita sendiri bagi kami orang kampung. Dulu masa kecil, nenek dan budhe (my mom's sister) hidup di desa. Walaupun mereka petani yang memiliki sawah padi berpuluh hektar, makanan keseharian mereka adalah nasi jagung. Padi yang mereka tanam, semua di jual untuk biaya sekolah enam orang anak mereka. Sedangkan makan nasi jagung lebih murah.

Kami sebagai (konon) anak kota, tidak mengerti alasan mereka memasak nasi jagung. Menurut kami, mereka masak nasi jagung karena ingin memanjakan kami. Sedangkan nenek sendiri sudah tidak pernah memasak nasi jagung karena proses yang sangat panjang. Jadi kami lebih suka makan di rumah budhe. 




Seperti cerita teman kecil saya Sandalian tentang nasi jagung, dia lebih tahu detail cara membuat dan memasak karena ibunya sendiri pernah memasak nasi jagung.

Tapi lebih kurang sama, jagung yang tua dan keras di tumbuk (entah berapa lama, sampai tangan mengelupas dan nangis..... masih juga nggak lembut), di rendam, di kukus dengan kerucut bambu di atas dandang tembaga (big long copper pot) yang beratnya naudzubilah....

Bisa dibayangkan kerja keras orang zaman dulu untuk menyediakan makanan bagi anak-anak mereka.... (maka berterima kasih dan hormat lah kepada orang tuamu)

Nasi jagung paling enak dimakan dengan urap (sayuran rebus, dicampur dengan sambal kelapa yang pedas), sambel, dan ikan asin. Kadang-kadang makan dengan botok mlandingan (petai cina, kelapa muda, dan bumbu) dibungkus daun pisang, di kukus. Tapi saya kurang suka dengan mlanding, karena bertekstur, dan memerlukan tenaga ekstra untuk mengunyahnya....







Dedak yang terpisah dari tumbukan jagung tidak dibuang oleh orang desa kami. Tidak juga dijadikan makanan hewan. Dedak jagung enak dimasak sebagai mendol / jenjet
(I don't even't know how to explain this food, I bet only people live in mountain area know what and how to cook this)

But yes, jenjet pun menjadi makanan favorit kami.

Ayam Cah Jamur



Ayam Cah Jamur Tahu 
(Chicken with Mushroom and Soft Tofu)







Another childhood food to share.
My mother is kind of person who loves 30 minutes cooking. 
Until now she is never fancy to make rendang, gulai, curry, or any dishes that required hours of cooking (even though we love those dishes so much)


when I asked her, why she very seldom cook curry or rendang for us, she will have thousand reasons to answer :
1. Gaz and electricity is expensive
2. Cook too long make the food loose the nutrition
3. Stay too long near the heat damage my  skin
4. I am very busy, I got plenty thing to do rather than stay in front of stove

and on... and on... and on... LOL love you mom... :-)


One Sunday morning, on my regular walk around the complex.
Again, I like to say and keep repeating that walking is just so relaxing and stress relieving.
It doesn't really burn so much calories like run but (who cares...)
I just walk slowly, enjoy the surrounding and think about what to cook for dinner.




Ayam cah jamur is kind of less than 30 min cooking,
you can change and mix the ingredient as much as you like


the key ingredient is just: onion, garlic, white pepper, oyster sauce, and corn flour..
the rest are just follow what you have in the fridge :-)

Ingredients:
200 gram boneless chicken, cut in a small bites
10 pcs mushroom, slices
1 carrot, peel and slices
1 pack soft tofu, cut in a small bites


seasoning:
1 yellow onion, slices
4 cloves garlic, slices
1/4 tbs salt
dash of white pepper
1/2 cup hot water mix with 2 tablespoon of oyster sauce
1 tbs corn flour mix with 1/4 cup water







fried the onion and garlic,
add in chicken and carrot.
add in 1/2 cup of hot water, oyster sauce and cover until the chicken cook.

5 minutes before served, add in tofu, corn flour, salt and pepper.

Served with hot steam rice :-)

Maggi Kawin, ko ado....?



Inspired by advertisement in the Radio




Whenever I took a taxi, or even just listen to radio on my morning jog, 
I often hear this advertisement about a student who mixed two kind of instant noodle and 
turn into new-incredibly yummy food.

Lol, That is Maggi mee advertisement.
I keep hear it over and over again.

So tonight I give it a try,
I choose the most familiar noodle which both can accepted by our tongue.
(Instant noodle with tomyam and laksa flavour is forbidden in our place)



I choose Maggi Curry and Soto Mee




Boil 3 cups of water (1 cup less, so the taste would be saltier than usual hehe)
add in sliced bird eye chili and bok choy, and egg

add in noodle

stir slowly for 1 minutes



Add in mushroom and frozen peas




Enjoy it :-)





I love the gravy, it's richer than normal Indonesian instant noodle but lighter than megi-kari.
The combination of curry taste with kefir lime leaves from soto is giving a nice hint too

And mt craziness of cili padi (bird eye chili) never stop,
I add them in almost every dish I want to eat




Finish in couple minutes 
Everyone loves it :-)

Thai Green Curry Chicken


 
 
 
Inspired by Marion in the Kitchen (Asian Food Channel) combined wit 30 min recipe of Jamie Oliver. I really want to give a try a home-made green curry chicken.
(just because the ingredients were not so many, and I confident enough to cook... LOL)
 
 

 
 
Last Saturday, with riding the scooter I went to grocery place to get he ingredients which actually not much thing. Once you have a jar of green curry paste in your fridge, and any vegetable.....
 
You just need to buy coriander, basil leaves, and coconut milk...
 
 


 
Ingredient:
1 pack chicken breast (about 400 gram)
5 snake bean / long bean, cabbage (any vegetable you can find in the fridge)
1 green bell pepper
1 handful fresh coriander ( use the leaves for soup, save the stem to blend for gravy)
1/2 handful Thai basil leaves
 
 
Gravy:
1 small cup thick coconut milk
2 cup water
4 teaspoon green curry paste
1 onion
1 small know ginger (about 1 teaspoon size)
1 block chicken cubes / chicken stock
*blend onion, ginger, coriander basil stalk
1 stalk lemongrass (optional)
1 kefir lime leaves (optional)
 




I pan fried the chicken first to make it less "chickeny"
just enough to make them brown
 
 


 
Discard the oil from chicken, rinse the pan,
heat up 1 tablespoon sunflower (or any cooking oil)
sauté blended coriander and green curry paste until fragrant
 
add in the chicken
 

 
pour in coconut milk, water and long bean, lime leaves and lemon grass
just because the color is so greeny... I add in some red chili to give some heat
 
I also purposely reduce the amount of coconut milk to make the gravy lighter and easier to eat.
 
 

 
Once the long bean soften,
add in cabbage and bell pepper.
 
salt, bit of sugar and pepper if necessary
 
couple minutes before your serve,
throw in basil leaves and coriander
 
 

 
again...
I don't like the pale color of curry
I chop some tomatoes and red chili for garnish
 


 
served with hot jasmine rice or rice noodle
 
YOU WILL LOVE IT :))))))

Bee Hoon Koay Soup



Good for raining day...



One evening Mr. back from the office with a bag of groceries and I found a weird thing.
Square wide noodle, it's more like wantan skin rather than noodle





This is the noodle look alike...

with some stuff I found in the fridge
I tried to made noodle soup



Ingredient:
1/2 pack bee hoon koay
4 cups boiled water
=> boil water in the pot in the a very big fire, add in bit of salt and cooking oil
=> throw pieces by pieces  the noodle to avoid them stuck each other..
=> boil for 2-3 minutes 

Mushroom, thinly sliced
1 carrot, slices
1 leaf cabbage, slices (or any leafy ingredients)
1 Onion, slices


Soup based:
3 cups water
1 pinch white pepper
1 block chicken cube
2-3 pcs chicken feet / chicken bone
3 cloves garlic
1 knob young ginger, slices
salt
=> boil all the ingredient, discard the bone once done.



Heat up the soup base, add in the vegetable. Boil for 5 minutes until the vegetable cook.
Add in the noodle.

Served with dark soy sauce, slices bird eye chili and squeezed of lime juice
(i use lemon)





not bad for experimental food :)

Bangi Kopitiam

We went there a while ago when the SBU got flat shoes sales.
But yeah.... we went late, all the cute models has gone

We drove so far to Bangi, and we were hungry...
One kopitiam is waving its hand to us to try their food.

Cheating Bakso (Meat Ball Soup)



Bakso aka Meatball noodle soup is now famous both in Malaysia too.
But living in Segambut area, eventhough most of them are Indonesian communities you will hardly find 
any decent Indonesian food along the place.


On Sunday, when I have plenty time to cook. I browse around the easiest recipe I could find to fill my crave.
And wala.... I made myself bakso.

Here is the Ingredients:

Soup:
1 pack of sup tulang mix powder (small)
1 litre water
Couple pcs beef bone
5 cloves garlic
Salt, pepper
pcs frozen meatball 
=> mix all the ingredients, and boil until the meat around the bone soft and tender.


Component:
1. little bit of glass noodle / soohun / beehoon soaked in a hot water until soft
1/4 pack of yellow noodle (I use instant noodle)
2 pcs tofu ( I use yong tau foo)

Condiment:
1 tbs chopped parsley
1 tbs chopped spring onion
1 tbs fried onion
1 tbs sweet soy sauce + chili





Once all the ingredient cook and soft,
arrange them in the bowl and pour with the soup

sprinkle all the condiment, as per taste



I just realize that I am too greedy, and put everything make my bowl super crowded.
